  • Total Compensation = $26.00-31.00 per hour (includes base + tips)

PASTRY SOUS CHEF ROLE RESPONSIBILITIES

  • Execute high-quality ice cream, sorbet, sauces, and baking production standards while meeting heavy volume demands and seasonal pars
  • Manufacture multiple bakery and topping products including sandwich cookies, ice cream cakes (assembly & decoration), candied nuts, and sauces
  • Thoroughly understand and execute all recipes, processes, and department SOPs; assist and provide feedback to others to ensure product standards are met
  • Create daily task lists for Pastry Cooks and assist the Pastry Chef with placing orders when needed
  • Provide onsite support to Classroom Instructors when Pastry Chef is not present
  • Assist the Pastry Chef with training, coaching, and mentoring production employees in job related skills and techniques
  • Oversee all production facility operations during absences of the Pastry Chef and assist with emergency coverage
  • Maintain exceptional cleanliness, organization, and appearance throughout the facility to meet or exceed food safety requirements as established by local and state health departments and industry best practices
  • Assist the Pastry Chef in sustaining operational inventory levels and product cost by monitoring waste, controlling portion sizes, counting inventory, and accurately tracking outgoing and incoming transfers and orders
  • Participate in and contribute to regular staff, and leadership meetings

  • 3+ years of foodservice supervisory experience required
  • 3+ years of baking and pastry experience required
  • High school diploma or equivalent
  • Must be 18 or older
  • Valid Serv Safe certificate or equivalent (may be obtained within 60 days of hire date)

 

ROLE PHYSICAL REQUIREMENTS

  • Move, traverse, or remain in a stationary position for up to 10 hours
  • Constantly use manual and automatic foodservice equipment
  • Regularly move up to 25 pounds for a distance of 50 feet or more
  • Occasionally move up to 50 pounds for a distance of 25 feet or more
  • Occasionally ascend/descend ladder to clean or lift items stored above
  • Occasionally position self to clean, maintain equipment, and retrieve items below counter height
