JOB DESCRIPTION:

The Executive Sous Chef of Outlets is entrusted with leading the artistry and precision of our culinary operations, ensuring every dining experience reflects the highest standards of refinement and excellence. This role embodies both innovation and tradition, curating inspired menus while safeguarding flawless execution across all kitchens and stewarding teams. With a passion for mentorship, the Executive Sous Chef nurtures a culture of craftsmanship, elegance, and pride among the culinary team. Partnering closely with the Executive Chef and senior leadership, this leader ensures that every detail, from ingredients to guest experience, speaks to the essence of luxury hospitality.

DUTIES & RESPONSIBILITIES:

  • Lead the culinary journey across all outlets, orchestrating kitchens that deliver precision and an uncompromising standard of excellence.
  • Guide and inspire the Stewarding team to uphold flawless standards of cleanliness, efficiency, and elegance in support of the culinary vision.
  • Safeguard the integrity of every dish, ensuring each plate reflects refinement, creativity, and consistency worthy of a luxury guest experience.
  • Imagine, design, and introduce menus that celebrate innovation and seasonality while honoring timeless culinary traditions.
  • Codify and refine recipes, championing research and innovation that position the property at the forefront of the global luxury dining landscape.
  • Develop detailed manuals, operational guides, and procedural standards that embody sophistication and precision.
  • Curate partnerships with purveyors of distinction, sourcing only the finest ingredients, equipment, and materials that elevate the guest experience.
  • Expand production capacity seamlessly and elegantly when required, without compromising artistry or excellence.
  • Collaborate with the purchasing team to ensure ingredients of the highest caliber are always available and meticulously maintained.
  • Orchestrate staffing and resources with care, cultivating an atmosphere of efficiency, elegance, and precision in every kitchen operation.
  • Champion uncompromising hygiene and safety standards while safeguarding refined quality and optimal food cost performance.
  • Inspire, mentor, and develop a team of culinary artisans, nurturing a culture of pride, passion, and creativity.
  • Provide thoughtful oversight of sous chefs and chefs de cuisine, ensuring harmony and seamless execution across all outlets.
  • Lead by example with visible, hands-on presence that embodies the spirit of gracious hospitality and luxury service.
  • Collaborate with leadership to conceptualize and realize innovative dining experiences that delight and inspire discerning guests.
  • Partner with the Executive Chef to design and guide multi-unit, multi-concept culinary operations of the highest caliber.
