Line Cook

Pay Details:

The starting hourly rate for this position is $23.00 per hour.

Line Cooks support kitchen operations by assisting Chefs and other kitchen staff. This position is in the Food and Beverage Department of Great Park Ice and Sports Complex. Hours for this position fluctuate depending on the arena event schedule.

Responsibilities

  • Fully understand temperature controls and the proper equipment to monitor temperature by completing daily Time and Temperature logs for your station

  • Ensure accurate labeling, dating, and rotating using the FIFO method for all raw and prepped food products

  • Know the eight most common food allergens, and follow the standards set at Great Park Ice and Sports Complex:  1) Milk, 2) Eggs, 3) Fish (bass, flounder, cod), 4) Shellfish (shrimp, crab, lobster), 5) Wheat, 6) Peanuts, 7) Tree nuts (almonds, pecans, walnuts), and 8) Soybeans

  • Follow recipe guidelines to prepare food based on the current menu

  • Practice proper work procedures, safety, and sanitation standards

  • Engage with venue guests and team members to ensure exceptional hospitality is always provided/received

  • Maintain food temperatures, food quality, and appearance of prepared food to our established standards

  • Know all menu items, ingredients, and preparation

  • Be comfortable with the arena and know how to navigate it personally to assist guests

  • Support any other Food & Beverage departments as needed

  • Work with operations counterparts to ensure event standards of service are reached

  • Additional responsibilities and tasks as deemed appropriate by the F&B management team at Great Park Ice and Sports Complex

Skills

  • A minimum of 12 months of culinary experience as a member of the Great Park Ice and Sports Complex Culinary team

  • Must demonstrate excellent knife skills and butchery procedures

  • Display excellent cooking skills by skills test (determined by Chefs)

  • Able to work all kitchen stations equally well

  • Excellent verbal communication skills

  • Solid organizational skills

  • Able to articulate par levels from any given station

  • Able to oversee multiple projects at one time

  • Working knowledge of state and local health code requirements

  • Able to work a flexible schedule in all kitchen locations on any given day

  • Team player

  • Must have mastered all responsibilities related to Cook 2, including multiple kitchen utility

Knowledge, Skills, and Experience

Education - High School Diploma or Equivalent

Experience Required - 1-2 Year's
