The Pastry Junior Sous Chef is responsible for assisting in all pastry preparation at the hotel. In addition, the Pastry Junior Sous Chef is responsible for ensuring that product quality and service standards are met and that optimum service is provided to hotel guests. The responsibilities of the Pastry Junior Sous Chef include but are not limited to focusing on accurately and efficiently preparing cookies, cakes, custards, breads, mousses and all other pastry products as well as prepare and scale products prior to baking. The Pastry Junior Sous Chef also performs other duties in the areas of dessert plate preparation, presentation and garnishing.
The key responsibilities include but are not limited to:
Prepares a variety of scratch baked goods and other food items using mixers, ovens, stoves, fryers, dough dividers, dough sheeters and a variety of other kitchen equipment.
Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
Maintains the accuracy of scaling required for consistent pastry production.
Maintains a clean, organized and sanitary workspace including pastry production shop, service line, pastry walk in and freezer.
Has a solid understanding of basic pastry techniques including but not limited to mixing bread dough, cake sponge, ice cream, mousse, chocolate tempering, plated dessert presentation and wedding cake production.
Handles, stores and rotates all products properly.
works in an efficient and professional manner, organizing tasks for efficiency and optimum quality.
Assist the Executive Pastry Chef and Assistant Pastry Chef in the operation of any and all needed duties within the pastry operation.
Works seamlessly with a diverse team of creative people, leading by example and maintaining open lines of communication between superiors and line staff in the pastry shop and the operation overall.
Ensure prompt response and follow up to staff and guests’ needs alike, communicating with the Pastry management team when necessary to address issues.
Helps to promote a positive work environment based on teamwork and professionalism.
Performs other related duties as assigned by the manager.
Qualifications:
Minimum of 5 years experience as a Pastry Cook or other Cook position.
Culinary Degree preferred
Demonstrated leadership abilities required
Must have superior communication and organizational skills
High school diploma or equivalent vocational training certificate.
Ability to communicate clearly and effectively in English with guests, co-workers, and management personnel.
Ability to compute basic mathematical calculations.
Ability to perform job functions with attention to detail, speed, and accuracy.
Must be able to lift up to 50 lbs. and stand for up to twelve hours per shift.
Ability to prioritize, organize and follow through with assigned tasks.
Ability to be a clear thinker, remain calm and resolve problems using good judgment.
Ability to work well under the pressure of meeting production schedules and timeliness of food displays.
Ability to handle multiple tasks at one time while maintaining a high level of professionalism.
Ability to work well with others in a team environment.
Must be flexible with schedules and can work holidays and weekends.
